Background The aim of this study was to clarify the mechanism behind the different erosive potential of regular and light cola drinks: pH difference and/or aspartame presence. Material and methods Sixty bovine enamel blocks were randomly divided into 5 groups: RC - regular cola, RCpH - addition of base to increase regular cola pH, RCAS - addition of aspartame to regular cola, LC - light cola, and LCpH - addition of acid to decrease light cola pH. Functionalized Silica Nanomaterials as a New Tool for New Industrial Applications

Abstract In this chapter, we report on the diverse applications of silica-based nanomaterials relevant for the food industry. The encapsulation of food ingredients and nutraceuticals and their use as antimicrobial agents and sensors has been explored. In the case of food ingredients, controlled-release materials responsive to pH changes and enzymes (i.e., proteases or esterases) are the main approximation. For antimicrobial agents, the materials are able to modulate the activity of the biocide, increasing the duration of the active substances. Abstract Many nanoparticular drug delivery approaches rely on a detailed knowledge of the acidification process during intracellular trafficking of endocytosed nanoparticles (NPs). Therefore we produced a nanoparticular pH sensor composed of the fluorescent pH-sensitive dual wavelength dye carboxy seminaphthorhodafluor-1 (carboxy SNARF-1) coupled to the surface of amino-functionalized polystyrene NPs (SNARF-1-NP). By applying a calibration fit function to confocal laser scanning microscopy (CLSM) images, local pH values were determined. Multiscale simulations of protein landscapes: Using coarse-grained models as reference potentials to full explicit models

Evaluating the free-energy landscape of proteins and the corresponding functional aspects presents a major challenge for computer simulation approaches. This challenge is due to the complexity of the landscape and the enormous computer time needed for converging simulations. The use of simplified coarse-grained (CG) folding models offers an effective way of sampling the landscape but such a treatment, however, may not give the correct description of the effect of the actual protein residues.
